Orange Cardamom Brioche Buns

Tender brioche dough filled with an aromatic mixture of sugar, cardamom and orange zest, baked until golden, and coated in a simple glaze. The smell of the bright orange, mingling with warm spice coming from your oven will have you salivating in anticipation.

Brioche pastries are one of my favorite things to eat, and the combination of the orange and cardamom make these bright and fun.

What you’ll need to make these Orange Cardamom Brioche Buns:

  • Half of a batch of Brioche Dough
  • Granulated sugar
  • Brown sugar
  • Two oranges
  • Cardamom
  • Powdered sugar
  • Vanilla extract
  • Rolling pin
  • Knife or bench scraper
  • Baking sheet
  • Parchment paper

What to do:

  1. Roll out your prepared brioche dough (you’ll use half the batch for this recipe).
  2. Combine the granulated sugar, brown sugar, cardamom, and zest of two oranges.
  3. Sprinkle the mixture over the dough.
  4. Roll up into a log and pinch the seam to seal it.
  5. Slice the log into 8 equal pieces using a sharp knife or a bench scraper.
  6. Place the slices on a baking sheet lined with parchment paper, leaving a few inches of space between them.
  7. Cover with plastic wrap and allow to rise until doubled in size, about 1 1/2 – 2 hours. They should be visibly puffy before they go in the oven.
  8. Bake in a 350 degree oven until light golden brown, about 20-25 minutes depending on your oven.
  9. Combine the powdered sugar, orange juice, and vanilla extract until smooth to make the glaze.
  10. Brush the glaze all over the buns while they’re still warm.

  • Step 1 In a small bowl, combine the granulated sugar, brown sugar, orange zest and cardamom. Set aside.
  • Step 2 On a floured surface, roll out the brioche dough to a 12″X16″ rectangle.
  • Step 3 Sprinkle entire surface of dough with sugar mixture.
  • Step 4 Starting at a long end, roll the dough up tightly and pinch dough together to seal the seam (think cinnamon rolls.)
  • Step 5 Trim the ends to create an even log.
  • Step 6 Cut into 8 even pieces.
  • Step 7 Place evenly spaced on a large baking sheet lined with parchment paper.
  • Step 8 Cover loosely with plastic wrap and set in a warm place to rise until doubled in size, about 2-2 1/2 hours.
  • Step 9 Preheat oven to 350 degrees.
  • Step 10 Bake risen rolls for about 20-25 minutes or until light golden brown. Start checking them around 17 minutes as ovens vary in temperature.
  • Step 11 While the rolls are baking, make the icing. In a small bowl, combine the powdered sugar, water, and vanilla extract and whisk until completely smooth.
  • Step 12 Once the rolls come out of the oven, carefully brush them all over with the glaze using a pastry brush.
  • Step 13 Let cool for about 10 minutes.
