This creamy, delicately spiced dessert is very satisfying. If you’re looking to shake up your Thanksgiving dessert spread, look no further. This is the one. It is a no cook recipe, so it comes together in minutes. It does need to chill for a few hours, so make it earlier in the day.
Tiramisu has been one of my favorites since the first time I tasted it. I just love the creamy texture and the subtle flavors, but I love this pumpkin version even more than the classic version.
Traditionally, tiramisu contains alcohol, but I decided to leave it out because I’m not a fan of boozy desserts, but if you are, by all means, booze it up.
I ditched the traditional ladyfingers in favor of Biscoff cookies, and it just works. That shouldn’t be surprising, as Biscoff cookies and coffee are a match made in heaven.
Pumpkin Tiramisu

Ingredients
- 1 cup strong coffee, cooled to room temperature
- 2/3 cup plus 2 T granulated sugar, divided
- 2 8oz containers mascarpone cheese
- 1/2 cup whole milk
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 tsp cinnamon
- 1/8 tsp ground cloves
- 3/4 cups heavy whipping cream, whipped
- 1 8.8 oz package Biscoff cookies
Directions
- Step 1 Combine the coffee with the 2 T granulated sugar. Set aside.
- Step 2 In large bowl, combine the remaining 2/3 cup granulated sugar with the whole milk. Stir until sugar is completely dissolved.
- Step 3 Whisk in mascarpone until thoroughly combined (this will take some time, but it will happen. Just keep mixing.)
- Step 4 Add pumpkin puree, cinnamon, and cloves, and whisk to combine.
- Step 5 Gently fold in the whipped cream.
- Step 6 Line up your components- coffee mixture, cheese mixture, and Biscoff cookies.
- Step 7 One at a time, dunk a Biscoff cookie into the coffee mixture and arrange in a 9″square pan. Continue until bottom of pan is covered.
- Step 8 Spread half of the cheese mixture over the layer of soaked cookies.
- Step 9 Repeat, making another layer of soaked cookies, and topping with remaining cheese mixture.
- Step 10 Cover and refrigerate at least 4 hours before serving.
- Step 11 To serve, cut into squares, and dust lightly with cinnamon or freshly grated nutmeg if desired.
